our story
nooc, that is our name. Well, it stands for Anouk. That is one of us, Aron is the other one (he calls her nooc). Together we started a roastery in Amersfoort, the Netherlands.
Our goal at Nooc is to source exceptional coffees that are produced by dedicated farmers. We want to have a close connection to the origin of our coffees, this is why we only work with partners who we trust and have the same values as us. Our values are to be honest and transparent about the coffee chain. By doing so we hope to make you more aware of the journey this coffee has made before ending up in your hands.
At Nooc we aim to give you a moment of flavour by roasting our coffees to their full potential, ensuring that each coffee highlights the farmers’ lifetime of dedication.
We hope to inspire you to connect to the story behind your cup, while letting the aromas and flavours do the rest.
Nooc was founded by Anouk van der Zwaard. During her studies in Art & Economics at the university of arts in utrecht, she started as a barista at a local coffee bar. her coffee adventure began without any knowledge and soon began to learn what coffee actually, more than (at the time) just a drink with caffeine. she became curious about all the different types of coffee, brewing methods and stories.
Coffee, in addition to music, quickly became a hobby that got (kinda) out of hand. Kitchen cupboards soon bulged with beans & brewing methods and

she started to delve more and more into the flavors of coffee. For her thesis research at the university of arts, she conducted research into the influence of music on the perceptions of flavor in coffee. she started NOOC from this 2-year research. nooc is place where she can combine her passion for coffee and music by bringing together the interaction between these two elements.
nowadays anouk fills her days sourcing and roasting coffees, all while tasting every batch to ensure quality and consistency. she is also the creative brain behind everything online and offline about nooc.

aron is the true brewing champ at nooc. he has been working for many years behind bars in Amsterdam and loves to create the most stunning latte art in his cups. for all brewing & pouring tricks, he’s the guy you need.
aron’s favourite part of the industry is the diversity in flavors. he loves to be surprised by new experiences and loves trying different coffees.
at nooc, aron makes sure to calm anouk’s busy brain. he creates lots of footage for our socials aswell as helping you out with any questions or inquiries.
